FOOD – Collana di Scienze e Tecnologie Alimentari La collana propone opere di autori italiani e stranieri sui diversi aspetti scientifici e tecnologici che coinvolgono la produzione, la trasformazione, la conservazione e la distribuzione dei prodotti alimentari di origine sia animale sia vegetale. Agli indispensabili manuali di riferimento si affiancano studi su temi specifici e sviluppi innovativi. In un settore caratterizzato da una forte multidisciplinarità, questi testi si rivolgono agli studenti e ai ricercatori, ai professionisti e agli operatori, ma anche ai progettisti e ai produttori di impianti e macchinari per le industrie alimentari. Un’attenzione particolare è posta ai problemi di igiene e sicurezza degli alimenti, sempre più al centro delle preoccupazioni del consumatore e del legislatore.
